As temperatures start to dip I love to reach for warming treats and these carrot cake bars hit the spot.

 Crushed pineapple provides moisture and sweetness to this old time favorite fall treat. Warm from the over or slightly heated in the microwave makes these bars a favorite. Dust with confectionary sugar for an extra touch of sweetness. 

  

 Carrot Cake Bars

1½ cups all-purpose flour

1/2 cup granulated sugar

1/3 cup chopped walnuts

2 teaspoons baking soda

½ teaspoon salt

2-teaspoon ground cinnamon

3 tablespoons vegetable oil

3 large eggs

2 cups grated carrot

1 ½   cup crushed pineapple, drained

 

Preheat oven to 350 degrees. Grease and flour a 9X13 inch pan. Set aside

 

 1. In a large bowl, combine flour, sugar, walnuts, baking soda, salt, and cinnamon; stir well with a whisk.  Combine oil, eggs, carrots and pineapple; stir well. Add egg mixture to flour and stir until well blended.  Spoon batter into prepared pan and bake at 350 deg for 30 minutes or until a wooden pick inserted in the center comes out clean. Cool completely on a wire rack. Cut into bars as desired.
